Yemeni coffees can be quite intense, and Sharqui Haraz certainly fits that criteria. The cup sweetness is rustic-tinged, with aromatic notes overhead that go from earth-toned to delicately spiced. You can also develop richly bittersweet chocolate flavors in the darker roast levels, which make Yemeni coffees a top choice for complex, bittersweet espresso shots too. The sweetness in the dry fragrance is unrefined and earthy, smokey bittersweets, notes of palm sugar, molasses bread with baking spice, and a hint of leather. The wet aroma pulls out savory-sweet scents, like salted honey cookie, pistachio nut bar, notes of date syrup, rustic dark cocoa, and dark spice accents. City+ roasts have a pleasantly bittersweet core flavor that expands to include notes of rustic raw sugars, with more potent burnt sugar accents. The aromatic profile brought out complex hints of cardamom, mace and clove spice, a note of chocolate malted grains, sappy-sweet accents of palo santo, and frankincense, and pungent black tea bittering in the aftertaste. My Full City roast was densely packed cocoa flavors – rustic raw cacao, 82% dark chocolate, bittering cocoa nibs – and had traces of dried stone fruit, and tobacco. We find Yemeni coffees brew best with at least 72 hours rest after roasting, where the complex flavor profiles start to coalesce.
