Cafetales de Dota makes a very nice everyday coffee and has the kind of balanced bittersweet base flavor that’s sure to please the crowd. It’s a lower acid cup that trades sharpness for rounded mouthfeel, and roast-toned flavors of chocolate and toasted nut are the stars of the show. The smells showed bittersweet and malty notes, with a muted hint of brûléed suger. The City+/Full City roasts showed a range of cocoa cup flavors, semi-sweet chocolate in the lighter roasts, dark cocoa powder in medium, to brooding baking chocolate at FC+ (likely into French for those desiring a really dark roast). As the coffee cools off some, I picked up on a soft hint of caramel, pistachio, almond, and chocolate biscuit. At darker roast levels, especially FC or FC+, the cup has a really nice
